Man from the silver mountain.
I struggle on which hand to watch, i mainly watch my left hand fingering but i struggle to sometimes pluck the correct string.

If i watch my right hand plucking then i get my left hand fingering sometimes wrong.

Does anyone have any tips to help me or is this something that will come with practice?

I wish I could tell you a way to overcome this but unfortunately the only way is practice :) I still look at my picking hand occasionally for difficult picking riffs. I also look at my fretting hand a bit too much still... though a little bit is okay :)

guitar playing has a little in common with typing after a while your hands will just kind of know where to go. my wife will come to ask something while i'm practicing and i'll keep right on playing without looking and answer her (she never gets over how i can do that) as always practice the more familiar you are with something the easier it gets. and yeah i look at my fingers to we all do.
and now for something completely different

agree with monwobobbo...
guitar playing with typing..
I grew up doing both(well for at least more-than-half of my eighteen years of existence) and with constant practice, it can only get better...
now, i seldom look at my right hand, while at my left hand, cares who if i don't look at it, it knows where to go, though sometimes it fails...(nobody IS perfect)
